This is the way Mr. R&R ate papaya while travelling through Africa, and apparently it’s incredibly good for the stomach. It is certainly very calming to prepare – the beautiful sunset colours of the papaya and glistening ebony seeds, a bit of gentle slicing and squeezing. And it’s delicious to eat, the soothing banana and yoghurt contrast with energizing lime juice and nuts in a shell of papaya. Balm for the soul in edible form.
We ate this salad yesterday under a cloud of dust, with five workmen drilling, sanding, staining and patching around us, fully one month behind schedule to finish the apartment… and we managed to feel rather zen-like. Perhaps it will work for you too.
Papaya and lime salad
Serves two
- 1 ripe papaya (it should give a little bit when you squeeze it)
- 1 lime
- 250g greek yoghurt
- 2 bananas
- Slivered almonds
- 2 tbsps runny honey
Slice the papaya in half vertically and scoop out the seeds of each half so you have two papaya boats to fill. Squeeze the juice of the lime over each half, allowing it to pool in the middle. Divide the yoghurt between the two, slice the bananas over the top and mix in the dip to combine. Sprinkle over the almonds and then drizzle over the honey.
